In my opinion, there are some points that you need to work out:
1. Create the specific design for your own shop
2. If you have a wide & big place, you may design some areas for specific persons, such as area for teen, area for business men, area for somoking, etc.
3. Make vouchers for return customers.
4. Make delicious foods / deserts on Special Days

I don't think you compete with them, they are competing with you because you are already popular and they are the newcomers in the block. What you have to do now is reevaluate your business and service then improve the areas you haven't done good and do better in the areas that they are not good at.

By the way, competing with competitor and competing with the brand is the different thing. There are many theories to establish brand, but one thing I would like to mention is that the brand will not last forever. Like as many computer brands such as HP, Dell, Acer, they were not the big brand at the time when the Lap top went into big bang boom. There is always a chance for nicher to dominate the world, and that chance exists at the place where the big brand can not penetrate, like as IBM couldn't penetrate in Lap top market at the beginning due to their cannibalism with their server computer market. As for coffee shop case, like Starbucks took the place by it's luxury and comfortable image, but after that more casual, pay and pick and lower price coffee shop is gaining the share. The important thing to create next brand is to see how the consumer's taste, technological innovation and competition among competitors may be changed in the long run.

You all have good advice, but I think I can summarize the most important and repeating advice: 1) differentiate (the closer you are to your competitor, the less relevant you are to your customer (you become like the competitor, then customer has a harder time to choose one); and 2) relevance (the more relevant you are to your customer's needs / wants / desires, the closer you will be to their taste and thus drive them to choose you. So you should not 'compete' with Highlands or Gloria Jeans, just be uniquely relevant to a particular target consumer. There are plenty of people who do not like chain coffee shops and those are your customers! People who like local places with personality will love to visit your shop. Theo mình thì cạnh tranh trong thị trường Việt Nam về lĩnh vực dịch vụ thì không khó nếu có chiến lược cụ thể và biết quản lý chất lượng dịch vụ tốt. Điển hình ví dụ về Highlands Coffee của Doanh Nghiệp Việt Thái, mình là khách thường xuyên tại đó những khi gặp vài người quan trọng, theo đánh giá về sự phục vụ một cách chủ quan cá nhân thì Customer Service chưa tốt. Cũng đã từng uống quen thuộc tại Gloria Jean, Cofee Bean,...ko biết vì lý do gì, Customer Service chưa có 1 doanh nghiệp nào làm tốt như Starbucks trên toàn thế giới. Nếu khách hàng họ được tôn trọng và lắng nghe, bên cạnh thưởng thức sản phẩm thơm ngon, đẳng cấp thương hiệu. Doanh nghiệp đó sẽ chiến thắng trong cạnh tranh. Hiểu thêm về thị trường Cafe tại Việt Nam, chất lượng Highlands Coffee và The Coffee Bean không thể chê vào đâu được, thậm chí còn ngon ngang ngữa hoặc hơn cả Starbucks. Lý do tại sao Starbucks là hàng đầu thế giới. Họ tập trung vào Customer Service, vì theo tâm lý tiêu dùng tại Việt Nam, Cafe trở nên là một nơi để giao dịch và thể hiện đẳng cấp của người dùng cafe. Doanh nghiệp cafe Việt Nam nào đảm bảo chuỗi hoặc quản lý nhân viên tốt trong dịch vụ chăm sóc khách hàng, họ sẽ chiến thắng.

It's all about customer service and keeping the customers you have - and having them return more frequently. Sell an 'annual member cup' and offer to fill it at a bargain price. Make the cup stand out by printing it with your logo - or choose several local charities (food bank, children's hospital, shelter, etc) and let your customers know how your annual cup program benefits the community and your customer with every visit. if you are not already offering snacks and/or sweets, find the best you can and add them. Provide a good selection of magazines and papers and comfortable seating for your customers to enjoy. Offer board games (checker/chess/etc on your tables) and encourage them to 'bring a friend'.
